Step 1: Prepare Mangoes

Wash the mangoes thoroughly and wipe them dry. Cut them into small pieces and put them in a bowl. Add salt and turmeric and mix well. Allow the mangoes to marinate for 1-2 hours.

Step 2: Prepare Spices

In a pan, heat mustard oil until it reaches its smoking point. Turn off the flame and let it cool. In a separate pan, dry roast mustard seeds, fenugreek seeds, fennel seeds, onion seeds, cumin seeds, and nigella seeds until they turn aromatic. Let the spices cool and grind them coarsely.

Step 3: Mix and Cook

After the mangoes have marinated, add the ground spices, jaggery, and red chilli powder. Mix everything well. Heat the mustard oil again until it starts to smoke. Turn off the flame and let it cool. Once it cools down, add it to the mango mixture and mix well.

Step 4: Store in a Jar

Transfer the Mango Achar to a clean and dry jar. Make sure to press the mangoes down with a spoon to remove any air bubbles. Keep the jar in a dry and cool place for at least a week before using. The Mango Achar will last for up to 6 months when stored properly.
