Ingredients

Instructions
Step 1: Prepare the meat
Take the meat pieces and trim off any excess fat. Season it with salt and black pepper, and set it aside.
Step 2: Prepare the spices
Mix together the curry powder, turmeric, ground coriander, ground cumin, and paprika in a small dish. Set this spice mix aside.
Step 3: Brown the meat
Heat the vegetable oil in a large pot over medium-high heat. When the oil is hot, add the meat pieces and brown them until they are evenly browned on all sides. This should take about 8-10 minutes.
Step 4: Add the spices
Add the chopped onion and minced garlic to the pot, and sauté them until they are fragrant and soft. This should take about 3-5 minutes. Add the spice mix to the pot, and stir until everything is well combined.
Step 5: Add the potatoes
Add the chopped potatoes to the pot, and stir them until they are well coated in the spice mix. Pour in the water or beef/mutton broth, and stir until everything is well combined.
Step 6: Simmer and cook
Bring everything to a boil, then reduce the heat to low and cover the pot with a lid. Let everything simmer for about 40-45 minutes, or until the potatoes are tender and the meat is cooked through.
Step 7: Garnish and serve
Once the Maz Idliso Locansi is ready, remove it from the heat and let it sit for a few minutes. Garnish it with fresh coriander, and serve it hot with your choice of side dish.
Tips and Variations
- If you prefer a thicker sauce, mix a tablespoon of cornstarch with some water and add it to the pot 5-10 minutes before the end of cooking.
- You can also add other vegetables like carrots, green beans, or peas to the pot for more flavor and nutrition.
- For a vegetarian version of Maz Idliso Locansi, you can replace the meat with tofu or tempeh.
