How To Cook Beef Potjiekos

Ingredients:

  • 2 lbs beef chuck, trimmed and cut into cubes
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, peeled and chopped
  • 1 cup beef broth
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions:

Step 1: Prep the Meat

Begin by trimming any excess fat off of the beef chuck and cutting it into bite-size cubes. Season the beef with paprika, thyme, salt, and black pepper.

Step 2: Sear the Meat

Heat up the cast iron pot over an open fire or on your stove. Add olive oil to the pot and let it heat up. Once hot, add the seasoned beef and cook until browned on all sides. Remove the beef from the pot and set aside.

Step 3: Cook the Vegetables

Add the onions and garlic to the pot and cook until the onions are translucent. Add the potatoes and carrots to the pot and stir to combine. Pour in the beef broth and canned diced tomatoes.
