What is Vors?
Vors is a hearty Armenian soup that is typically made with lamb or beef, vegetables and grains. It is a staple dish in Armenian cuisine and is often served during special occasions or family gatherings. The dish is known for its unique blend of flavors and comforting qualities.
Ingredients:
- 1 pound beef or lamb, cut into small cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup potatoes, cubed
- 1 cup barley or rice
- 6 cups water or beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- Preparation: In a large pot, heat some oil over medium heat. Add onions, garlic and cook until the onions are translucent.
- Add the cubed meat and brown on all sides.
- Add in the carrots, celery, and potatoes and cook until slightly softened.
- Add in water or broth, tomato paste, and spices. Bring to a boil and reduce heat to low. Cover and let simmer for about an hour or until the meat and vegetables are tender.
- Add in barley or rice and cook for another 20 minutes or until the grains are tender.
- Remove the bay leaf before serving.
- Enjoy your vors with a nice crusty bread or Armenian lavash!
Tips:
- Cut the vegetables into small, bite-sized pieces for faster cooking.
- For a thicker soup, add more barley or rice to the recipe.
- Consider adding a dollop of sour cream or a squeeze of lemon for added flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
