What are lamb knuckles?

Lamb knuckles are a flavorful and tender portion of meat that is located on the shank bone of the lamb. They contain a lot of connective tissues, which makes them perfect for slow cooking methods, such as braising, stewing or roasting.

Ingredients

Here are the ingredients you will need to cook delicious lamb knuckles:

  • 4-6 lamb knuckles
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2-3 carrots, chopped
  • 2-3 stalks of celery, chopped
  • 2 cups of beef or lamb stock
  • 1 cup of red wine (optional)
  • 2-3 sprigs of fresh rosemary
  • 2-3 sprigs of fresh thyme
  • 2 bay leaves
  • 2 tablespoons of oil
  • Salt and pepper to taste

Instructions

Follow these steps to cook mouth-watering lamb knuckles:

Step 1: Preheat the oven

Preheat the oven to 325°F (165°C).

Step 2: Sear the lamb knuckles

Heat the oil in a large oven-proof Dutch oven over medium-high heat. Season the lamb knuckles with salt and pepper to taste, and sear them for about 2-3 minutes on each side or until they are browned. Remove the lamb knuckles from the Dutch oven and set them aside.

Step 3: Sauté the vegetables

Add the onions, garlic, carrots and celery to the same Dutch oven and sauté them for about 5-7 minutes until they are tender and lightly browned.

Step 4: Add the liquids and seasonings

Add the beef or lamb stock, red wine (if using), rosemary, thyme and bay leaves to the Dutch oven. Stir everything together and bring it to a simmer.

Step 5: Add the lamb knuckles and braise

Return the lamb knuckles to the Dutch oven and spoon some of the liquid over them. Cover the Dutch oven with a lid and place it in the preheated oven. Cook for about 2-3 hours or until the meat is tender and falls off the bone.

Step 6: Rest and serve

Remove the Dutch oven from the oven and let it rest for about 10-15 minutes before serving the lamb knuckles. You can serve them with mashed potatoes, steamed vegetables, or a green salad.

Enjoy your delicious lamb knuckles!
