How To Cook Maotwana

Ingredients:

  • 1 kg goat meat
  • 1 onion
  • 4 garlic cloves
  • 2 tablespoons ginger paste
  • 2 tablespoons tomato paste
  • 1 tablespoon paprika
  • 1 tablespoon coriander
  • 1 tablespoon cumin
  • 2 bay leaves
  • 3 tablespoons oil
  • 2 cups water
  • Salt and pepper to taste

Instructions:

Step 1: Prep the meat

Trim the goat meat and cut it into bite-sized chunks. Rinse the meat thoroughly and pat dry with paper towels. Season the meat with salt and pepper.

Step 2: Cook the onions and garlic

Heat 3 tablespoons of oil in a large pot over medium heat. Add 1 chopped onion and cook until translucent. Add 4 chopped garlic cloves and cook for another minute.

Step 3: Add spices

Add 2 tablespoons of ginger paste, 2 tablespoons of tomato paste, 1 tablespoon of paprika, 1 tablespoon of coriander, and 1 tablespoon of cumin to the pot. Stir and cook for 1 minute until fragrant.

Step 4: Add meat and water

Add the seasoned meat to the pot and stir to coat with the onion and spice mixture. Add 2 bay leaves and 2 cups of water. Bring to a boil, then reduce the heat to low and cover with a lid.

Step 5: Simmer the meat

Simmer the meat for about 2 hours or until tender. Stir occasionally and add more water if needed.

Step 6: Serve hot

Remove the bay leaves and serve the Maotwana hot with steamed rice or bread.

Note: Maotwana is traditionally served with cold, fresh tomato and onion salad with a squeeze of lemon juice.
