  • 1 cup of basmati rice
  • 2 cups of water
  • 1 can of chickpeas
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 3 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of garam masala powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of chili powder
  • 2 tablespoons of oil
  • Salt to taste
  • Fresh coriander leaves, chopped

Instructions:

Follow these simple steps to cook delicious Malana:

Step 1: Cook The Rice

Wash the basmati rice thoroughly and soak it in water for 30 minutes. In a pot, bring 2 cups of water to a boil. Once the water is boiling, add the soaked rice and a pinch of salt. Cover the pot and let the rice cook over low heat for about 15 minutes or until the water is fully absorbed. Once done, remove the pot from heat and let it rest for 5 minutes before fluffing the rice with a fork.

Step 2: Prepare The Masala

In a pan, heat 2 tablespoons of oil over medium heat. Once the oil is hot, add the chopped onions and fry until they turn golden brown. Add the minced garlic, grated ginger, and chopped tomatoes, and fry for another 2-3 minutes. Add all the spice powders – cumin, coriander, garam masala, turmeric, and chili powder – and fry for another minute, stirring constantly.

Step 3: Add The Chickpeas

Drain and rinse the chickpeas before adding them to the pan with the masala. Stir well to ensure that the chickpeas are well coated with the spices. Cook for another 5 minutes, stirring occasionally, until the chickpeas are heated through.

Step 4: Combine Rice And Masala

Add the cooked rice to the pan with the chickpea masala. Mix well so that the rice is evenly coated with the masala. Add salt to taste and stir for another 2 minutes.

Step 5: Garnish And Serve

Garnish the Malana with freshly chopped coriander leaves and serve hot. Your delicious Malana is ready to be enjoyed!
