Ingredients

For the maize meal:

  • 2 cups of maize meal
  • 4 cups of water
  • 1 teaspoon of salt

For the stew:

  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, chopped
  • 1 can of chickpeas, drained and rinsed
  • 1 can of kidney beans, drained and rinsed
  • 1 tablespoon of tomato paste
  • 1 tablespoon of curry powder
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 3 cups of water

Instructions

Maize Meal

  1. Mix the maize meal and water together in a large pot.
  2. Add the salt and stir well.
  3. Cook over medium heat for 30 minutes, stirring occasionally.
  4. Reduce the heat to low and continue cooking for an additional 30 minutes, stirring occasionally until the maize meal is thick and fully cooked.

Stew

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic and cook for 2-3 minutes until softened.
  3. Add the diced red and green bell peppers and cook for an additional 2-3 minutes.
  4. Add the chopped tomatoes, chickpeas, and kidney beans and stir well.
  5. Add the tomato paste, curry powder, cumin, paprika, salt, and black pepper and stir well.
  6. Pour in the water and stir well.
  7. Bring the mixture to a boil, then reduce the heat to low and cover.
  8. Simmer for 30-40 minutes until the vegetables are fully cooked.
