Ingredients:
- 500g dried samp and beans mix
- 1 onion, chopped
- 2 ripe tomatoes, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of vegetable oil
- 1 teaspoon of smoked paprika
- 1 teaspoon of crushed coriander seeds
- 1 teaspoon of ground cumin
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2L water
Instructions:
Follow these easy steps to prepare your samp and beans:
Step 1: Soak the Samp and Beans
Rinse the samp and beans mix thoroughly with water and then transfer it into a large pot. Add enough water to cover the beans and set it aside overnight to soak.
Step 2: Cook the Onions and Garlic
Heat the vegetable oil in a large pot and add the chopped onions and minced garlic. Fry until translucent.
Step 3: Add the Tomatoes and Spices
Add the chopped tomatoes to the onions and garlic mix and stir in the smoked paprika, crushed coriander seeds, and ground cumin. Cook for a few minutes until soft.
Step 4: Add the Samp and Beans Mixture
Add the samp and beans mixture to the pot along with 2 litres of water. Bring the mixture to a boil on high heat, then reduce the heat to low and let it simmer for about 2-3 hours, stirring occasionally.
Step 5: Season with Salt and Pepper
Once the beans and samp are soft and the mixture has thickened to your liking, add salt and black pepper to taste.
