Ingredients

Before you start baking, you'll need to gather the following ingredients:

  • 225g plain flour
  • 1 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • 115g unsalted butter, softened
  • 100g granulated sugar
  • 1 large egg
  • 4 tbsp black treacle or molasses
  • 50g finely chopped crystallized ginger
  • Granulated sugar (for coating)

Instructions

Follow these steps for the perfect ginger biscuits:

Step 1: Preheat the oven

Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. Grease and line a baking tray with baking parchment.

Step 2: Mix dry ingredients

Mix together the plain flour, baking powder, ground ginger, ground cinnamon, ground nutmeg and salt in a bowl. Set aside.

Step 3: Cream butter and sugar

Cream the softened unsalted butter and granulated sugar in a separate bowl, using either a wooden spoon or electric whisk, until light and fluffy.

Step 4: Add wet ingredients and mix

Beat in the large egg and then add the black treacle or molasses. Mix until combined.

Step 5: Add dry ingredients and ginger

Add the dry mixture from step 2 little by little, stirring as you go, until fully combined. Then fold in the finely chopped crystallized ginger.

Step 6: Shape the biscuits

Using your hands, roll the mixture into small balls, each about the size of a walnut. Roll each ball in granulated sugar to coat it, then place it on the lined baking tray, spacing them about 3-4cm apart so they have room to spread as they bake.

Step 7: Bake the biscuits

Bake for 10-12 minutes, or until golden brown and just firm to the touch. Leave to cool for a few minutes on the baking tray, then transfer the biscuits to a wire rack to cool completely.
