Ingredients

  • 8 oz rice noodles
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cucumber, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts
  • For the dressing:
    • 3 tablespoons olive oil
    • 1 tablespoon curry powder
    • 2 tablespoons honey
    • 2 tablespoons soy sauce
    • 2 teaspoons sesame oil
    • 1 clove garlic, minced
    • 1 tablespoon fresh lime juice

Instructions

Step 1: Cook the noodles

Bring a large pot of water to a boil. Add the rice noodles and cook for 3-4 minutes or until tender. Drain and rinse with cold water. Set aside.

Step 2: Prepare the vegetables

In a large bowl, combine the sliced red onion, red and yellow bell peppers, and sliced cucumber. Set aside.
